Appam is traditional south indian Breakfast recipe. In my childhood days, My Brother love appam with coconut milk ,my mom will make once in month for sure. All tasty food are always in my list includes appam. Same in my husband family , they make regular Appam with coconut milk,once in a month.If you ask any 80s kids most of them have Puri,Appam, Idiyappam ,kara adai are always once in their weekend menu.

MAKING APPAM WITH YOUNG KIDS

Since appam is favourite in both of home used to make once in month .But,after first kid born, reduced the appam to once in 2 month but when got my second kid – Reya born and my elder was 4 year old ,appam recipe become once in 3 month , then once in 6 month .When my second kid turned 2 year ( terrible 2 year ) i literally forgot to make appam recipe:). Yes , making appam with coconut milk (used to make from fresh coconut) is hard with 2 young demanding kids around home. Yes , Appam is yummy recipe, but the number of vessels and cleaning up the messy countertop is really a big task for me/ for most of mother.

Though my elder kid Abhinav love to eat Appam , but with terrible 2 year old , always stick with easy to make homemade food. There are days ,we had appam has special food from buffet . Gradually crossed that phase , when my younger kid turned 4 year and elder one 8 year .Now increased the appam recipe gradually from 4,3,2,one month once now .

Why sharing all this , if any of you mommies struggling to handle young children and managing home ,it’s totally fine to step back and look at our kids growing big instead of leaving them alone and cooking all time in kitchen.

No added Yeast, Poha ,Cooking soda or Cooked rice

My mom make traditional Appam recipe without addition of any yeast or poha and even cooked rice . Appam is always a big hit with perfect coconut milk with added sugar or jaggery.

Appam with Coconut Milk

Equipment

  • Appam Pan , Mixie and Big Jar For Coconut Milk Extraction

Ingredients

For Appam

  • 1 Cup Raw Rice
  • 1 Cup Idly Rice
  • 1/2 Cup(reduce 1 tblsp) Urad dhal
  • 1 Tsp Fenugreek seeds/Vendhayam
  • Salt as Needed

For Coconut Milk

  • 1 Whole Coconut
  • (or)2 Cups Frozen Coconut
  • Hot water/Cold water as needed
  • Pinch Cardamom
  • Sugar or Jaggery as needed

Instructions

  • Soak all the ingredients (under appam) in one vessel .Soak it overnight or 4 hrs.
    Add all the soaked ingredients and grind to make nice smooth batter.
    Add salt and keep for fermentation overnight or 4 to 5 hours .
    After fermentation, add some water and give nice mix to make little watery consistency (pouring consistency),and not thick like idly batter.
    Heat appam kadai in medium heat and pour 11/2 ladle or required amount of batter .
    Hold both sides of appam kadai and give nice rotation to spread the batter in circle shape.Then cover the kadai and cook in medium flame.
    It will take 1 or 2 minute to cook then flip the appam from kadai to plate and serve immediately with coconut milk added with sugar or jaggery.

How to Make Coconut Milk

  • If you are using fresh coconut then crack ,take off coconut pieces and soak in hot water for 10 to 15 minute to get thick milk.
    or if you are using frozen coconut, defroze the pack and soak 2 cups of coconut with hot water for 15 minute ,grind it to take coconut milk.
    Extract coconut milk 2 times with addition of required water and filter in bowl .
    Add grounded cardamom powder and required sugar to the filtered coconut milk .
    Mix well before serving with appam.
    For Mommies with little Kids,
    Make the peeling or defreezing coconut previous day evening , keep it ready to put inn hot water in morning to extract the coconut milk.
    This will save you lot of time and keep you relax to work with kids in morning time.
