Our recent favourite recipe is Butter scotch cake .We have tried different versions of vanilla cake and chocolate cake but exploring other flavours of cake give much more interest to baking.

This butterscotch cake turn into super soft ,moist along with frosting ,it gives heavenly flour of butter scotch in each bite.

If you are dessert lover ,then you can’t stop with single piece of this cake. Using butterscotch pudding powder gives extra mild flavour to the cake.

Making cake for special occasion from the scratch will give extra happiness and sure this cake will be the best to make for birthdays.

You can make this cake 2 day before and do the frosting before 4 to 5 hours of serving or one before birthday.

Is the Cake Mother Friendly,

Best to make with one year old kid and above, it will take extra time. If ingredients are ready then you can make this cake when your baby taking nap.

It is okay to try with 6 to 12 month old baby for important occasion. But you need helping hands to clean your vessels after making .

If you are busy mom with active kids of one or two, then split the cake making into 2 part. First make the cake and completely cool down the cake and keep it in airtight container or wrap with cling wrap in fridge upto 2 days.

Make the frosting one day before and do the decoration before the day or on the day of birthday or before 4 to 5 hours before cutting the cake.

Include your 3 year to 10 years kid to make the cake .

After decorating with frosting, set the cake by placing in fridge for upto 30 minutes to 1 hour .

It is easy to make the cake with prior preparation.

Equipment

Ingredients

  • 21/2 cups all purpose flour
  • 31/2 tsp baking powder
  • 1/2 tsp salt
  • 3.4 oz butterscotch instant pudding mix
  • 3/4 cup unsalted butter(room temperature)
  • 11/2 cup packed light brown sugar
  • 3 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 4 large eggs
  • 11/4 cups milk

BUTTERSCOTCH FROSTING

  • 11/4 cups unsalted butter ,room temperature
  • 11 oz butterscotch chips,melted
  • 51/4 cups powdered sugar
  • 1/2 tsp salt
  • 1/2 cup milk
  • 13 oz butterscotch chips for decorating

Instructions

INSTRUCTIONS

  • Preheat oven to 350 degree Fahrenheit.
  • Prepare two 8 inch cake pans or one 12 inch cake pan with parchment paper in the bottom or grease the bottom with butter and then grease the side.
  • Mix the dry ingredients together flour, pudding mix, salt, baking powder in a bowl and set aside.
  • In a big bowl add butter,brown sugar and vegetable oil beat together well for about 3 -4 minutes until fluffy and light in color.Don't reduce the creaming time.
  • In the same bowl add eggs ,vanilla extract and mix until smooth and combined well.
  • Now add half of the dry ingredients and mix until well combined .Keep scrape down the sides of the bowl to add all the all extra flour.
  • Add milk and mix until well combined then add the remaining dry ingredients and mix until combined well.
  • Divide the batter into equal parts if you are using 2 to 3 pans or pour directly into single pan and bake for 25 to 30 minutes, then remove to cooling racks to cool completely.

Butterscotch Frosting

  • Add the butter to a large mixer bowl and beat until smooth.
  • Melt the butterscotch chips in oven or by double boil method.
  • Add the melted butterscotch chips with butter and combine well.
  • Add powdered sugar and mix until smooth with butter, melted chips and sugar.
  • Now add the remaining milk as needed to get the right consistency of frosting and set aside.

Cake Arranging and Decoration

  • If you used two cake pan then place the first cake on a serving plate or cake decorating board base.
  • Spread 3 to 4 tbsp of frosting on top of the cake and spread into an even layer.Make sure the top of the cake is flat or if flat the top of cake with sharp knife .
  • Add second layer of cake on top of the frosting.
  • Add another 3 to 4 tbsp of frosting on top of the cake and spread into an even layer.
  • OR if you are using single large cake pan ,then cut the large cake into two halves and spread the frosting as mentioned above.
  • Cover the outer layer of both cake with remaining frosting and press the butterscotch chips on sides of the cake immediately after frosting.
  • By using remaining frosting,decorate the cake using cake pipe around the border of the cake.
  • Yummy soft butterscotch cake is ready to serve .
