Happy to write one of my most favourite sweet Palkova. There is strong childhood bonding between me and palkova along with spicy chips. Sometime my mother makes palkova in home. I just run around her until she make palkova.OMG ,Days are running so fast , now this recipe for my kids Abhinav and Reya and they come around me for this yummy sweet recipe. Tried the recipe few times now and then with my kids and they liked it very much and now sharing the perfect milk sweet /palkova recipe .
If you are staying out of India ,then it’s worth trying this milk sweet in home every 3 to 5 month .Mostly ,the sweet recipe are loaded with lots of sugar. Surprised to use less amount of sugar in this recipe.For this recipe used only 1/2 cup plus 1 tbsp of sugar for 3 liter of milk.
Mother Friendly Recipe?
It is not perfect recipe for mommies who having young kids like below age 2 or 3 years.
If you like to try with little kids then make sure you plan ahead like make palkova/milk cake along with lunch preparation or when your little kids is sleeping .
If you have new ” mommy brain”then its best to keep timer to save your time and to avoid burning of milk.
Best recipe to try with kids above 4 years ,if you have older kids then they can engage with you to stirring the milk in medium flame until it become hot.
It is little time consuming and need extra patience but its all worth it at the end.
Worth the time, effort and cost ?
Depends on the amount of milk you are using ,the cooking time will vary, I used 3 liter of milk and it took almost 2 hour 30 minutes , if you are using 1 liter than it will take 40 minutes .
For 3 liter milk , i got good medium size 20 to 25 pieces.
Since its homemade, can’t beat for its freshness and quality texture.
Worth the money, usually i will not compare the cost effective to make recipe in home but for especially this milk recipe is cost higher in outside sweet shop like 1 lb 8$ which comes with 4 to 5 medium pieces.
For this 3 liter A2 milk full fat milk ,sugar and ghee ,altogether it not cost more then 6 to 7 $ and got more then 20 pieces. So it’s definitely worth time and money to try in home .

If you are focusing on reducing weight ,then this recipe will definitely increase your weight upto 1/2 kg ,if you are not in control
So ,plan your diet with this recipe for that week .
If your kids are demanding for this recipe .Happily make it ,by keeping enough healthy snacks for you in the sides(fruits,nuts just to stop cravings)
Once you make the recipe , immediately take one nice piece of milk cake in separate box.Along with your kids ,take 1 tbsp per day .Just taste with you kids.This way , you can stop your craving for sweet.
If you take one full piece then increase your workout for the week or make this recipe on your cheat diet day then you will be perfect.
Milk Cake /Palkova without condensed milk
Equipment
- Heavy bottom silver or iron pan ,loaf tin or silver plate, one long ladle and one long spatula
Ingredients
- 3 liter Milk
- 1/2 +1 cup+tbsp Sugar
- 1 tbsp Ghee
- Cashews/ Pistachio to decorate
- 1/2 tsp Lemon juice
Instructions
- 1.Take heavy bottom silver or iron pan .In medium flame bring the milk to boil.
- 2. Use long ladle or spatula and keep stirring the milk to avoid milk stick to the pan & formation of milk layer on the top.
- 3.Keep stirring until the milk reduces to half in medium flame.In the meantime ,grease the loaf pan or plate with ghee and keep it ready aside.
- 4.Once the milk reduces , add the lemon juice .
- 5. Now ,the milk start to curdle .( where it forms granules like structure) Continue stirring the milk until it become thick and bubbly.
- 6.When the milk become thick consistency add the sugar in 2 batches.So that the sugar will dissolve with milk completely.
- 7.Once the sugar dissolve ,the mixture will become little liquid and don't worry.Continue stirring and reduce the flame to low.
- 8.After few minute of stirring ,the mixture will become thick ,now add the ghee.Milk start to splutters..
- 9.Be patience ,after few more minute of continuous stirring ,you can see the milk mixture starts to separate from the pan.
- 10.Milk turns thick and slightly golden color and starts to leave the pan.Now time to transfer the milk mixture to greased loaf pan or silver plate.
- 11.If you want the center part of milk cake to be brown ,then cover the loaf pan with thick cloth for 3 hours .The cloth will sustain the heat inside the loaf .So that milk will get little more heat in the center which turns to brown color.
- 12.Or allow it cool completely, with sharp knife separate the milk cake from sides of the loaf pan and reverse the pan and unmold the cake from pam.
- 13. Cut into medium piece and serve with topped pistachios or cashews
- 14.Serve warm or cold to unfold the fresh milk cake at home.
Tips:
- 1.Use full fat milk and keep the flame in medium flame .
- 2.Avoid using any kind of plastic for this whole recipe.
- 3.Since milk is main ingredient .Store it in airtight container in refregirator for upto 4 to 5 days
- 4. If, you not get any granules then add little more lemon juice but not more than that.
