Kuska /plain biryani is easy and simple recipe recipe without adding any vegetable or meat. Just pair kuska with onion raita and your yummy kuska is ready for lunch.

In my school days ,first time tasted this kuska biryani ,after that it is one of my favourite biryani recipe and after kids it become handi recipe too.

In this recipe made up of seeraga samba rice which gives great flavour , you can substitute with basmati rice.

Equipment

  • Pressure cooker,

Ingredients

  • 11/4 Cup Seeraga samba rice or basmati rice
  • 2 Cup water
  • 3/4 Cup Coconut milk
  • 1 Medium Onion
  • 1 Medium Tomato
  • 1/2 Cup Mint leaves
  • 1 1/4 tsp Ginger Garlic Paste
  • 1/2 tsp Red chilli powder
  • Handful Coriander Leaves
  • Salt to taste

To Temper

  • 1 tbsp oil or ghee or mix both for 1 tbsp
  • 2 number Bay leaf
  • 2 number Cardamom
  • 1/2 inch Cinnamon stick
  • 1/2 tsp stone flower
  • 2 number Cloves
  • 2 number Green chilli

Instructions

  • Soak the rice in water for 15 min.Strain the water and set the rice aside.
    2.Heat oil & ghee in a pressure cooker,once the oil is hot add cinnamon, cloves, bayleaf, cardamom,stoneflower and splitted green chilli.Allow it to splutter.
    3. Add in onion saute for min and then add ginger garlic pate and spray some water and saute till the raw smell of ginger garlic paste goes off.
    4. Add in roughly chopped tomato ,salt and saute until mushy in medium flame for few mins.
    5.Add in mint leaves , red chilli powder ,turmeric powder along with required salt .Saute nicely till the masala mix with onion tomato.
    6.Now , ad the washed rice along with coconut milk and give mix together.
    7.Add the required water and pressure cook for 2 whistle in medium flame.
    8.Once the pressure is released ,open coker and fluff trice with topped coriander leaves.
    9.Serve hot with onion raita and enjoy your lunch.
